Spice Odysee restaurant opens Thursday
by Emma Kirk
It is a dream come true for Spice Odysee owners Sathish and Keerthana Kumar who are about to open their first restaurant in Busselton.
The much loved curry van owners started their food truck business seven years ago hoping one day to open their own restaurant.
“I am so happy to be opening here,” he said.
“The community support has been really good - when people tell me it is really great - I feel the same.”
Chef Kumar said he first came to the region 11 years ago to work for Bunker Bay, then moved on to become a chef at Cullen Wines when he decided to go out on his own.
“At Cullen I tried some new food, people loved it a lot and told me I should start my own business,” he said.
At the time Chef Kumar could not afford to open his own restaurant so he started out small in the food truck business which has operated throughout Busselton, Dunsborough and Margaret River.
“I was the first full time food van in the region,” he said.
“Now is the right time to start the restaurant and I will focus on Southern Indian cuisine.
“Southern Indian has a vast variety of spices and curries. There are mountains and oceans there, the mountains are a chilled region so people use special spices to keep their body temperature up.
“Some spices are heat spices and some spices are cool and sweet.”
Chef Kumar said while they will also serve more traditional curries and favourites it may take diners a little time to understand the menu and cuisine of Southern India where he is from.
“I have dosa on the menu, when I first started seven years ago only a few clientele knew what dosa was,” he said.
“Now it is so popular, I will do the same thing in my restaurant and once people know the food I am sure they will love it.”
After having a soft launch on Monday night, Spice Odysee the restaurant will open to the public six days a week from Thursday at 5/17 Bussell Highway in Busselton (behind Subway).
People will be happy to note that the Kumar’s will still be operating their food van throughout the region.
